Finished in extra-old Haitian rum casks and bottled at a healthy 116.1 proof, this could easily have become a finish-forward whiskey, with the rum dominating everything else. Instead, Castle & Key shows surprising restraint. The rye remains firmly in the driver’s seat while the rum cask influence adds texture, sweetness, and just enough intrigue to keep things interesting. It’s a whiskey that feels different without feeling strange.
Experimentation Without Losing the Rye
One of the most impressive things about this release is how little the finishing cask overshadows the base whiskey.
Many finished ryes eventually become a showcase for the secondary barrel. Here, the opposite happens. The rum cask acts more like a seasoning than the main ingredient. It softens the edges, rounds out the texture, and introduces a touch of sweetness without masking the herbal spice and earthy character that define the pour.
For a whiskey that spent over a year in a finishing barrel, that’s surprisingly difficult to pull off.
The bottle itself is classic Castle & Key. Distinctive glass, premium presentation, and enough small design details to keep whiskey nerds entertained long after the cork is pulled. Few distilleries put as much thought into packaging as Castle & Key, and this release continues that tradition.
