From the first nosing, it’s obvious this isn’t trying to imitate a classic Kentucky or Pennsylvania rye. Instead, it embraces everything that makes Texas whiskey unique: bold flavors, heavy grain character, pot still richness, and a profile that’s earthy, smoky, and unmistakably its own. Whether that’s exactly what you’re looking for depends entirely on your palate.
The Whiskey Behind the Bottle
Produced entirely in-house by Balcones Distilling in Waco, Texas, this Bottled in Bond rye is distilled in copper pot stills, aged for four years, and bottled at 100 proof.
Its mash bill is anything but ordinary, combining four different rye grains: 91% raw Elbon rye, a variety grown primarily in Texas and Oklahoma, along with Cara Rye, Chocolate Rye, and Roasted Rye. Those specialty grains give the whiskey an intensely roasted, malty character that’s rarely found in American rye.
At around $50, it competes with some excellent bottled-in-bond ryes. The experience, however, couldn’t be more different.
