Peg Leg Porker Spirits was founded by Nashville pitmaster Cary Bringle, whose barbecue restaurants have become a Tennessee staple. After losing his leg to bone cancer as a teenager, Bringle embraced the nickname “Peg Leg,” building a brand that celebrates good food, good whiskey, and not taking life too seriously.

Spirit of America Bottled in Bond continues that philosophy while putting an interesting twist on Tennessee whiskey.

Rather than relying solely on the traditional Lincoln County Process before barreling, Peg Leg Porker runs the mature whiskey through proprietary hickory charcoal after aging. The result is a whiskey that carries familiar Tennessee smoothness while adding a subtle layer of smoke that feels more like time spent around a smoker than sitting beside a campfire. It’s an approach that’s different without feeling gimmicky.

 

Tasting Notes

Aroma

The nose immediately heads in a different direction than most Bottled in Bond bourbons. Soft smoke mingles with caramel corn, roasted nuts, and warm caramel, creating an aroma that reminded us of opening a fresh bag of Cracker Jack at a summer baseball game. Underneath it all is a gentle sweetness that keeps the smoke from ever taking over. It’s inviting, nostalgic, and unique.

Taste

The palate is softer than the nose suggests. Candied pecans, caramel, and toasted sugar arrive first before giving way to gentle oak and a touch of smoke that quietly follows the whiskey rather than leading it. The texture is velvety and remarkably easy to drink, making the 100 proof feel even more approachable than expected.

Rather than chasing bold flavors, Peg Leg Porker focuses on balance and drinkability. The hickory influence never dominates. Instead, it adds just enough character to make the whiskey memorable.

Finish

The finish is smooth and medium-length, carrying lingering notes of toasted nuts, light smoke, and gentle oak. There’s just enough spice to remind you it’s still a Bottled in Bond whiskey, but the lasting impression is one of warmth rather than intensity. Like the rest of the pour, it leaves you wanting another sip rather than overwhelming your palate.
